Chef Andy Poisson, the Nunavut Arctic College camp cook instructor in Cambridge Bay, stands with some of his students, who are wearing black, at their lunch counter in the NAC building. As part of their course work, Poisson's students prepare freshly-made subs and wraps, stuffed with fillings cooked on site, Tuesday to Friday during lunch. The $10 menu includes a choice of two homemade soups and a piece of fruit.
